4 pears, slightly ripe, leave skin on
– 1/4 cup honey, plus 1 additional tablespoon
– 1/2 vanilla bean, seeds scraped out
– 6 sprigs fresh thyme
– 2 tablespoons of coconut butter
– 1/4 cup orange juice
– 8 ounces Greek yogurt
– 2 ounces sliced almonds, lightly toasted


– Preheat the oven to 400 degrees F. Clean pears from seeds and slice in half;

– Soak pears in a small bowl of water with a tbsp of lemon juice;

– Set pears aside;

–  In a small saucepan, add honey, coconut butter, orange juice, thyme springs and the seeds from the vanilla bean pod;

–  You can also use vanilla extract as a replacement;

–  Stir until mixture dissolves and simmer for 5 minutes;

– Bake pears in an oven-proof baking dish face-down;

– Cover them with honey combo before baking them;

– Roast for 15 minutes, then turn and let pears soak in their juices. Roast another 15 minutes;

– Let the roasted pears cool off for 10 minutes, then turn them backwards and pour the mixture in the middle.
